I would do a tortilla soup/chicken tortilla soup instead of the clam chowder, but it all looks great. As a girl from Texas, I LOVE mexican food! I wish I could be there! Churros sounds wonderful!  What about sopapillas for dessert? They this lovely fried bread dusted in cinnamon and sugar and served with honey. One of my favorites!

The options we picked were choices from certain menus we had to pick from so there was a tortilla soup alright in there but FH wanted the clam chowder. The only other options dessert wise were tiramisu and coconut & choc bread pudding.
