I made these last night and the guys loved them! They are so simple to make its ridiculous! Plus it cost me under $10 for everything.
Ingredients:
red and yellow food coloring
1/2 cup white frosting
1/4 cup flaked coconut
48 vanilla wafers
24 chocolate covered thin mints
1 tablespoon sesame seeds
1/2 cup sugar
1/2 water
Directions:
1. Preheat oven to 350 degrees F.
2. Divide frosting into two bowls. Add red food coloring to one bowl and yellow to the other, mix. Optional: Place coconut in a resealable plastic bag; add green food coloring and shake to coat.
3. Place 1/2 of the vanilla wafers, flat side up, in an ungreased cookie sheet. Top each wafer with a peppermint patty. Place in the oven about 1-2 minute or just until chocolate begins to soften.
4. Remove cookies from oven, let cool.
5. Mix 1/2 cup sugar and 1/2 cup water in bowl.
6. Sprinkle each mint cookie with 1/2 teaspoon coconut (for lettuce). Frost each mint cookie with the red frosting (ketchup) followed by the yellow frosting (mustard). Place wafers, flat side down, on top of cookies. Squeeze wafers together, forming sandwich cookies. Brush the vanilla wafers with water sugar mixture. Sprinkle with sesame seed.
