Originally I wanted to do carnation pomanders on square vases lining the aisle, but then I saw this pic (#1). I think it has a very similar effect and would probably be much cheaper to do. Plus, carnations don't really come in any color that I would want to use.
I think a ball of hydrangea (maybe 2 stems since they are full on their own) on a 5x5 vase would look great.
White?
Dark purple?
Magenta?
Burgundy?
Several colors?

But I love hydrangeas. LOVE THEM. They're one of my favorites. :-D
my florist said that to do hydrangeas would be 20-30 per centrepiece... as opposed to 50-60 for carnations because you'd need so many more carnations to fill the same space.
Go for hydrangeas!
