Kinkos will not only print but cut your cardstock to specified dimensions. They charge per cut and I believe can cut like 14 sheets at once.

I was going to use my friend's invite business to do my invites but with everything I want (pocket fold, 4 enclosures, stamping, embossing, silk ribbon) it was going to cost me about $600 so I'm buying everything separately a nd putting them together myself. Its not really a DIY since I'm not printing or cutting anything myself. I'm just assembling. Saving about 250 on that.

I'm also making my pocketfold invites. You shoulc check out paper-source.com, cardsandpockets.com, and mygatsby.com They are inexpensive.  I heard cardstock inserts work best on laser printers instead of inkjet printers.

You are right....invitations are so expensive.  I'm on a tight budget so I need to keep in mind to not go overboard especially with embellishing them. Mine are probably going to be simple with a pretty bow.
