I also had the same dilemma as you. I ended up deciding to get married in a catholic church. Most churches (i say most because there are some that have very strict rules) only require you to be baptized, not confirmed or anything else. If you look for a more modern or newer catholic church their rules will be more easy going. When we met with our pastor he never even asked if we lived together (which we do, and it is obvious since our address is the same). We only have to attend one pre-marital class which is on a sunday all day and attend mass every Sunday. There will be more meetings with the Pastor and others once the wedding gets closer, but I was expecting to have to take a million classes and devote a lot of time to it. I do know for a fact though you will have to be a member for at least 6 months before they will even allow you to get married in the church. Also, dates fill up very fast for churches! I looked at 6 different churches before I found one with our date. Just take a look around, call, and ask questions. If it just doesn't fit in with your schedules then it may be best if you jsut get married at your country club. In the end all that really matters is that your two will get to spend the rest of your lives together! :)
