I found this pic of the perfect cake for my wedding. I want to save money and only have the top layer real cake and have a sheet cake in the back to serve to our guests. When I inquired with a cake company at the Toronto Bridal Show what the cost difference would be from all three real cake tiers to my version. The girl told me it would be the same cost because of the intricate detail. Tell me this is not a simple cake to replicate? I think the girl is full of it.

I would assume that it would be cheaper to have sheet cakes and just one real tier. I would look for a good baker. That cake is very pretty. Would you do a purple ribbon and leave everything else the same?

Yeah. Definitely a purple ribbon. Yeah, it`s hard to find a baker that won`t try to screw you on the price.

That doesn't sound right to me at all. Definitely call around to different bakers.
We are having a 4 tier cake, but only need 3 tiers... we just like the look of 4. So our bottom tier is going to be fake. Noone will know the difference.

I make cakes professionally and your idea is one I've done with a bride. Yes the detail work is the same but with cake dummy's as tiers there is no leveling, torting, etc. So personally I would charge for the work but baking a sheet cake and using that to serve with one 'real' cake tier on top should cut out a fraction of the cost. Some bakeries or cake decorators will try to push you to make decisions that up their cost like any other wedding vendor. Find someone honest and someone that your comfortable with, there is a lot more work involved in these cakes than most people realize however a good business person who is passionate about her craft should want to work with you to get the look that you want within a fair price range.
