Personal Pies
Ok so here is the deal, my wedding is going to be in november, so I thought it would be nice to make personal pies for each person (minature pies in other words) as a take home favor. I am sure the out of towners will especially enjoy this treat later back at the hotel. I need help figuring out how to make over 100 minature pies in pecan, pumpkin, and apple. I mean I know how to make the fillings but how do I make them minaure size? I have heard you can use muffin tins, but I don't know. Just thought maybe someone on here had done this before. HELP!

Go to a store that specializes in selling or renting bake/cake making equipment first - they may have pie/tart  ware that you could rent and you could just buy frozen pie pastry shells and cut them down to fit into the smaller plates and add your filling.  As you need to do 100 you would want to do this as simply as possible.  If you like to bake then make your own pastry.  I would also look up on the web if there are any bakeries in your area that deal in large volumes and give them a call and see what amounts you may need to make that much pastry rather than do small batches or they could even do for you?  Good luck.  We are getting married on the Thanksgiving long weekend (Canadian in Oct.) and am having pumpkin cheesecake and apple pies along with cake.  I would rather eat pies myself!!
